I've had this sharpener for about a week. I've used it on my Global knives and it really does not produce a very sharp knife. Maybe I'm not using it correctly, however, I've read the manual and used it according to the directions.

This is excellent tool to keep your knives sharp and in good shape, unless you really know what you are doing. It is very easy to use as well. I also have the western knife sharpener from Chef's Choice (equally recommended) but I am not sure I see a great difference between the two when I sharpen my Japanese knives. Maybe using the western knife sharpener altered the blade (European knives have a 20deg blade, Japanese a 15 deg one - maybe mine ended up with a 20deg blade?).
